The nougatine manufactured by the Silly company is based on a process of artisanal manufacture in copper tanks where the dry fruits (almonds or roasted hazelnuts) are incorporated in caramelized sugar. The duration of cooking, the work of the paste as well as the composition of this one must be very precise in order to obtain a product of optimal color, texture and taste.
Once the dough is at the right temperature and with the right viscosity, it is passed between cylinders that give it the desired shape: round, square or rectangular. The nougatine sheets can then be used as a bottom crust for dresses of all kinds.
The nougatine can also be declined in the form of granules as garnishing of dresses.
The different types of nougatine are the following:
-Round 20 mm and 25 mm (boxes of 2 kg or 6 kg)
-Squares 8 mm, 12 mm, 20 mm and 25 mm (boxes of 2 kg or 6 kg)
The thickness of the nougatine plates is about 2,5 mm.
-Granules 0-3 mm (boxes of 10 kg)
