A creamy vanilla ice cream shot through with shards of caramelised nougatine that keep their crunch, even at -18 °C. Contrast at its finest.

Ingredients

  • 150 g Silly nougatine in granules
  • 500 ml whole milk
  • 250 ml cream
  • 6 egg yolks
  • 120 g sugar
  • 1 vanilla pod

Preparation

  1. Make a crème anglaise with the milk, cream, vanilla, egg yolks and sugar.
  2. Leave to cool then churn in an ice-cream maker until creamy.
  3. Fold in the nougatine granules at the end of churning to preserve their crunch.
  4. Place in the freezer for 2 hours before serving.
